Our 2020 Phoenix Reserve Cabernets results from a barrel selection of the best performing barrels from our Cabernets from a vintage that is showing itself to be one to remember for big reds in the Yarra Valley. Made from a blend of 50% Cabernet Sauvignon, 25% Merlot, 10% Cab Franc, 8% Malbec and 2% Petit Verdot this is a classic blend that displays intense dry red fruits accompanied perfectly by toasted oak notes and supple tannins. Ready to drink now and will improve with age. Drink now until 2037
Deep garnet with crimson edges, the Phoenix Reserve opens with aromas of blackcurrant, plum, and dark cherry layered over cedar, graphite, and spice. The palate is bold yet refined — cassis, blackberry, and hints of cocoa unfold across a framework of fine, firm tannins. Extended ageing in French oak brings lift and texture, balancing the fruit’s intensity with elegance and length. The finish is long, savoury, and quietly powerful — a wine built to evolve beautifully over time.
Crafted from select Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec, and Petit Verdot grown on the west-facing slopes of our estate. The fruit was harvested at optimal ripeness and co-fermented to achieve seamless integration between varieties. After fermentation, the wine was transferred to a mixture of 40% new and 1–2-year-seasoned French oak barriques, where it matured for 18 months. The result is a reserve-level wine that combines structure and longevity with depth, purity, and a polished texture worthy of its name.
Phoenix Reserve Cabernets pairs effortlessly with rich, slow-cooked dishes — braised lamb shoulder, eye-fillet with red wine jus, or roast beef with Yorkshire pudding.
